This vegetable salad is a healthy and vibrant dish, filled with fresh vegetables and herbs. It's easy to assemble and perfect for picnics, barbecues, or as a nutritious side to any meal.

Ingredients:
- 1 cup of flour
- 250g quinoa
- 2 cups of water or veg broth
- 1 red pepper sliced
- 2 cucumbers
- 230g asparagus
- 5 radish
- 75g chopped coriander
For the dressing
- 80ml tahini
- 1tbsp diluted sea moss gel
- 75ml filtered water
- 2 tbsp fresh lemon juice
- 1 tbsp of honey
- 2 tsp olive oil
Directions:
1. Cook the quinoa according to the package instructions.
2. While the quinoa cooks, slice vegetables into bite-size pieces. These can be cooked or you can choose or leave them raw
3. Add sea moss gel to some warm water and soften for a few minutes to dilute. Then combine all ingredients together in a bowl to make the salad dressing.
4. Once the quinoa is done add to a large bowl and mix in the vegetable and with sea moss vinaigrette dressing
5. Serve over the quinoa salad and enjoy hot or cold.
